caramel ...oh my



I made caramel sauce in the crock pot today. I took a can of eagle brand sweetened condensed milk in the crock pot - covered it with water totally and simmered on low all day ( with the paper removed but the lid on.)There is a danger of the can exploding so eagle brand doesn't recommend this lol... nothing like a little danger in cooking , i say

Peanut Butter Cups



Since Julie had a yucky day... this is for her...

Melt Chocolate in a double boiler or microwave. Soften peanut butter in the microwave add a bit of honey if you like a sweeter filling.

spoon chocolate into the mold . Put in fridge to harden. fill when hard and pb cooled but still soft.

noodles


What I do is buy these "steam fried " noodles. Soak them a couple of minutes in water to soften them. I stir fry veggies. Minced garlic, onions, celery, peppers, mushrooms, carrots until soft but still a tad crunchy. Then I add some wasabi powder to soya sauce and some spices as I like. Epicure makes an herb and garlic one that rocks. add it to the veggies... toss in the noodles and mix up. nothing to it. Sometimes I add marinated beef strips to it for protein and it is a complete meal. Otherwise it is starch and veggie all in one.

Steak Roll Ups With Blue Cheese

I stole this recipe from A Year Of Crockpotting. I altered it a bit. These are with my changes.


One tray of thin steaks ( usually about 5-6 dollars at safeway)
Soy Sauce

Red Wine ( I used merlot - barefoot- my favorite brand of wine- everything they make is fab)
6 cloves garlic chopped coarsely
Blue cheese
gouda cheese


Roll up the cheese into the beef and place in crock pot with the rest of the ingredients. Cook on low for 4-5 hours or so. The original recipe had 2 T Worcestershire sauce and no gouda in it. I added some various spices (3 onion ).


It was quite tasty the meat actually remained in rolls but the cheese bubbled out. I am not sure if I rolled them too tight. Next time I would add some beef broth and less of the soy/red wine mix. I served it with steamed potatoes ( butter and lemon dill sprinkled on ) and green beans both cooked in the steam bags in my microwave. I also started with a iceberg/cucumber salad with blue cheese dressing and croutons and bacon bits.

cheesy chicken and salsa

I have no stove and oven. Mine is toast. So I am stuck with crock pot, rice cooker, microwave, deep fryer, george foreman grill and bbq. Not too bad.... It's the odd stuff like pasta that is hard to cook ;-) I am buying a stove and will get it in the middle of june, so this will be a creative time. What a better time to start a recipe blog. I will get organized and take pictures of the food in time.

Cheesy chicken and salsa in crock pot. It was thrown together with ingredients I had in the cupboard/fridge

Tostitos con queso sauce- 1 jar
Salsa 1 jar
Chicken breasts
mix together.... cook for 8 hours on low or 4 on high
add steamed broccoli near the end.

serve on rice. Add shredded chesse to garnish. Sour cream to taste.

Quite tasty - didn't take a picture , but this tastes better than it looks.

Now if you don't have it, just bring me a check for the water
